The key method is to get Bowser to throw out moves you can punish. Evade all attacks that don’t work for you, then punish once Bowser misses.
When Bowser throws out fire breath, that’s when you strike. That’s a great time to get some damage in. Dash over him and attack from behind. Start to jump over once his step goes up to start the fire breath.
Jump over his shell spin and damage him from behind.
Dodge air attacks to prevent them from hitting you.
Shield when you can’t avoid.
Consider using floatier characters like Kirby and Yoshi. Zoners might be good for getting damage in consistently, but their mobility is a losing trade-off in how to beat Giga Bowser.

However, a lot of measurements would put Bowser at about 50 Ft with this applied, although that doesn’t make much sense for Smash Bros’ scaling, or Mario.
